Steel Pans ‘vs’ Enamel Pans
One of the questions we are most often asked is: Which pan is better? Steel or enamelled finish? Here is the definitive answer: In terms of cooking performance they are both exactly the same. After that it down to personal preference.
There is a care element to be considered as well as an authenticity element. The steel pans require a little more care once you have finished your meal. Just wash up as normal and dry them immediately. Follow this straight away with quick rubbing to the surface of the steel pan using any kind of vegetable oil to prevent it from rusting.
As you repeatedly use your steel pan it will tarnish slightly as it becomes seasoned, changing colour and absorbing more flavours each time it is used - this is totally normal and should be expected. The enamel pans you can simply wash and leave. They will always clean up to look brand new.
The authenticity factor comes into play when you actually visit Spain and eat paella out. You will never see paella served in Spain from an enamelled pan.
